I always cook flank steak hot & fast to medium rare. Whether on the grill, cast iron, or broiler. Flat top works too if you have one. Rest 15 minutes and slice against the grain, then dice if preferred for tacos and such.

For marinades, I yours sounds good as do others listed. I usually make a savory version with soy/ garlic/ onion/ red wine vinegar / lemon etc. For fajitas, add lime juice and some orange juice concentrate.

Really like these bottled marinades too in a pinch……….
