I would probably dispense with the bag in the oven and cook it without.

How low of a temp does it hold? I assume it's convection with multiple fans?

It would probably be an awesome reverse sear device.

I use my oven to reverse sear all the time if I don't want to smoke it.

everything I read says to use a bag. Can hold a temp from 100 onward.

now, more importantly, I can hold a brisket at 140 after a smoke which my current oven can't do, 170 is the lowest it will go.

being installed on Friday and will have more details, it's a Frigidaire.

Also does steam baking, and bread proofing which I look forward to trying.

yeah that's nice. I tried to hold a brisket once at 170 and did not like the results.
