The IP makes an awesome cheesecake. I used a 7" removable bottom high sided cake pan (wrapped foil around outside so it wouldn't leak). Texture was fantastic: so much so, I was disappointed with the texture of a larger, 9" cheesecake I baked a couple weeks later in the oven in a water bath. I'm a convert to IP for a cheesecake, all the way.
I did no-soak red beans this weekend, and I'm still dialing in the texture. Beans were tender & full of flavor after 50 minutes, but watery. Next time, I'm gonna reduce the liquid to 6 cups for 1 lb of beans and see how it goes. (The beans did thicken quite a bit after overnight refrigeration.) Black beans are up next, later this week.
