Do you know anyone that raises it? Maybe check Craigslist for emu breeders.
That was supposed to be the next big thing in the 90s. I remember trying some emu meat and it was kind of odd -- it was poultry, but red meat. Another reason why it never caught on is I remember hearing there were all sorts of tax breaks for people who raised emus and they got yanked away.

Some people had Emu farms in Greene County, AL down the road from my family's land in the 90's. They went out of business and just let them all loose. During deer season we would catch them on camera and have one occasionally run through a field. My cousin shot one of them; the meat was good but not anything special
