Yes, yes. I love chicken or duck gumbo with a hit of seafood from the oysters. If you're feeding the squeamish, you can cut the oysters into 1/2s and they'll practically disappear into the gumbo, leaving only flavor behind.

The duck breasts will be too tough if not cooked for a long time?

Question: are these pen raised or wild ducks? Makes a difference. Always go wild if you can.

I've never had much success in cooking wild duck in a gumbo. The meat is so lean and tough, that it just comes out very dry. If I were to do a duck gumbo, I'd do a farm raised duck...much better.

Leg meat won't be dry. And just blow the breast meat apart with a long, slow cook. Works fine.
