Dry black eye peas and left over ham and shank...

should I treat it the same as I would red or white beans?

Yes. That also works very well with split peas when making fresh split pea soup.

Can't go wrong with ham and the ham bone in a pot of beans, any beans.

Here is my super easy slow cooker recipe. I don't soak the peas.

1 package dry black eyed peas
1 jalapeño seeded and chopped (add more if you want)
6 Pods Garlic
1.5 teaspoon koscher salt
½ teaspoon pepper
1 or 2 teaspoons Tony’s Chacheres
2 yellow onions
3 slices Bacon cut into 1/2" pieces
48 oz chicken broth

In your case, you could use your ham and shank instead of bacon.

Basically just combine all this in a slow cooker and let it go for 8 hours.

I know some don’t like soaking their beans/peas, but I do. Usually one 1lb bag to 1qt water, a few bay leaves, and soak overnight. In am, put soaked beans/peas in slow cooker, a chopped onion, half clove chopped garlic, 1ts-1tbs red pepper flakes, couple cups chicken stock, whatever meat you want to use, s&p to taste. Usually cooks 8am-5pm’ish...
