Being bored at the house, I am going to take on making some cheese. Seems like Mozzarella is the easiest to make and can also turn that into burrata. Here is the recipe Im going to use -

I've made ricotta before.

If you wrap the drained ricotta in cheese cloth and press it beneath a weighted plate in the refrigerator overnight, you can also make a simple ricotta salata, paneer, queso fresco, or other fresh farmers cheese.

I made a saag paneer recipe once and did the homemade paneer. Heated milk, curdled with lemon juice, strained. Cut up the finished cheese, seasoned it, and sautéed it. It was a good project, but not worth doing again.

Have made mozzarella, ricotta, paneer.....the ricotta and the paneer were fine. The mozzarella was quote boring and ordinary. I used regular supermarket milk, though.
