AKA 5-plus, I believe...anyone here with experience with this line? Most of my SS cookware is All-clad D3 (12" frypan, 3qt. sauté pan, various sauce pans), with one copper core piece (10" frypan), and a Madein (3qt. Saucier). Wanting a French skillet. I really prefer the D3 over the Made In, and don't have a reason necessarily not to buy the D3 French Skillet, but wouldn't mind trying something new, and I'm attracted by the welded handles (no rivets) and the Silvinox cooking surface treatment.

Not all brands or lines have a French skillet in their lineup, and I'm specifically looking for clad SS as opposed to disc-bottom type.

The demeyere 5 is very good but their Atlantis line is the cat’s pajamas. You’ll never regret the little bit extra. It’s a lifetime pan.

Didn't really want a 7 ply pan and the 11" French skillet in the Atlantis is 5+ lbs as opposed to 3+ in the Industry line. Nice stuff no doubt though.

Understandable re: the heat. As far as the ply, it’s constructed in a far superior fashion than All-Clad, though. Especially the D-5, which just contains more steel, not more aluminum.

quote:

4.8 mm thick clad design (stainless steel inside/outside, 3.7 mm aluminum alloy interior) for even heating and large heat reservoir so it won’t drop in temperature too much if you throw in a steak or large fish fillet, for example. That 3.7 mm thickness is roughly twice the thickness of the aluminum layer in All-Clad Stainless. And the total heat capacity of Proline is roughly 75% greater than All-Clad Stainless of the same size (taking into account heat capacity differences between stainless and aluminum).

Never really understood the draw of the D5 - unless you want a brushed finish I guess, and exactly the reason you mention, proportionally more steel. I've been happy with D3 and especially the copper core, which is a great looking pan. I'd love to put a Demeyere Proline in my hand to see how it feels. I notice the 11" in the Atlantis Proline has a helper handle, whereas the Industrial 5 doesn't. Guess that helps with the weight issue.
