The only correct way to cook crawfish is to steam and soak. All other ways are just short cuts that come up short.

I have been doing basically the same thing for 20 years. 8 min boil and 20 minute soak. Never a crawfish left on the table.

Boil in fresh and soak in seasoned water( liquid crab boil)
takes a little longer to soak but cones out really good... I also like to put a little salt on top of the crawfish in MY trey... but im a fat arse

i had this same discussion saturday night at a crawfish boil. you get 10 guys at a boil you get 10 different ways to boil them. to each his own. shite i prefer bbq to crawfish any day of the week but i am from texas what do you expect. i had to loan out my boiler and pot that i got for a wedding present last year just to get use out of the damn thing.

Boil for 8 minutes..don't soak..drain then pour 1/3 into ice chest. The key here is to use seasoning SPAREINLY when pouring of the dads. Repeat until all dads are in the box. Let steam for 5 minutes. Then enjoy!

The absolute worst dads i ever ate was at a golf tournament in Gonazales a couple of years ago. You would have thought they were from Tejas. They had soaked for so long, when i pinched the head/tail, it squirted the guy across the table from me. He was dressed in purple and gold, so i didn't even say sorry. Ate three dads, threw the rest of the 5 lb. order in the can.

I'll just say this. I know a guy who cooks some seriously bad arse crawfish, and he puts them in an ice chest, seasons them, shakes them, and let's them steam. I've tried it and couldn't pull it off, but I think it had to do with using a 100 qt ice chest when I should have used a 50. In any case, I thought it was ridiculous too until I had them, and they were as good as any I've had to be honest with you. I don't do it because I have my method and I'm hard headed like the rest on here I'm sure, but I'm a witness to it being pulled off well.
