I don't have a recipe, but I want to get the recipe for the one at Segnette Landing. It's the restaurant behind the shrimp lot in Westwego. Theirs is out of this world.

Make Crawfish Etouffee.. Buy two pie crust one for the top one for the bottom and bake. Wife (no pics) makes this all the time.

Crawfish Pie

1/2 stick ( 1/4 cup ) butter
1 medium onion chopped fine
1/3 cup celery chopped fine
1 can or 2 cups chicken broth/stock
1/2 TBSP cayenne (to taste)
1/2 TBSP Wortershit sauce
3 TBSP flour
1/2 bell pepper chopped fine
2 cloves garlic
1 tsp salt
4 green onions chopped fine
2 lbs crawfish tails with fat

Melt butter,, add flour cook ten minutes on medium heat. Do not brown. Add onions, bell pepper, celery, and garlic. Cook 30 minutes until soft. Add crawfish, broth, salt, worstershit, and green onion. Cover. Cook on low 30 minutes stirring often. Cool. Pour into pie crust and bake 425F for 20-30 minutes.
