Definitely don't pull too early, you really want that fat to render. In fact I've let fatty beef ribs go up to 210 before. First, it can be hard to get a true reading with the fat and bone, I normally take 2 or 3 extra temps with the pen to make sure its good. Second, its really hard to over cook those with all of the fat.

I dont cook my beef ribs to a temp per se. Usually somewhere between 195 and 203. I start probing with a toothpick and when it will go in like butter they are done. Check in different areas. If you cook them too long they can take on a gamey flavor.

Thanks. I am watching the temp, I'm just want approximate time so I know when to pu them on.
