I loved to eat fries or chips on my sandwiches too. And, anything with mayo was (gave it up - too fattening) heaven to me. Try a dollop in your red beans - adds a wonderful creaminess.
I went to a Catholic school, but hated all things seafood as a child (particularly "fish" sandwiches). Every Friday during Lent I had mayo sandwiches b/c I refused to eat that fish patty thing.

tuna or chicken salad, thin sliced tomatoes, crawtators, bunny bread, blue plate.

all about the texture and spice contrast.
