re: Chicken sausage

This has been my biggest disapointment with Rouse’s buying out Leblance’s. They were cranking out an amazing chicken sausage at Leblance’s before the buyout. I tried buying some to put up right after the deal was announced but they had already swapped over to the Rouse’s hot garbage chicken links. I tried to give them a shot in the hopes that the decision makers at Rouses would recognize the superior product and just change the labels but no luck. The quality went to shite immediately.

I have done a few batches myself using a similar chicken/pork ratio’s to the OP’s and they have come out decent but my seasoning needs some work.
