Chestnuts - how do you deal with them....

Do you let them dry out in shell before dealing with them? Do you cut and then boil them, or roast?
I plan on "processing" them and then using them for the next few months. I was referred to several good recipes on this board, thanks btw.

I just roast them on an open fire.
Seriously, we just buy a jar of them from William Sonoma and add to corn bread dressing for Thanksgiving and Christmas.
