Char Broil Big Easy St Louis Style Ribs

Is it possible to do St Louis style cut ribs in it? It's not the smoker version but does have a dial to change temp from high to low and in between. I've searched the web and I can't find cooking procedures for the non smoke version..only the smoke one (start on high for 20 mins then drop to low for 40-45 minutes. Then wrap in foil for an hour and check). If ok, put bbq sauce on back in for 15 minutes.
I don't use a sugar heavy rub so not worried about it charring bad, so I don't think I'm going to use foil because it's pretty forgiving so I think a few degrees either way will still keep them juicy and tender. Or should I? I just plan on looking for the meat to separate from bone at the ends at around 3/4 to an inch and say done and finish with dry rub and light coating of sauce and put back in for 10-15 minutes to get those two together in a bit of bark.
