Just made my first pot of the Fall-Winter. Forgot how really great it is.

Make medium dark roux.
Sautee onions, celery, green onions, garlic
Add a can of chicken stock
Add 2 of the small cans of tomato sauce
Add 1.5 pounds of catfish, cut small.
Cayenne pepper and salt to taste.
Cover and cook low for 20 minutes (since I use cast iron, I cook medium for 10 and then shut the heat off and let it coast 15).

Serve with crusty French Bread.
