I usually buy big hunks of beef or pork and part it out myself. When doing so, I trim much of the fat cap off and render that to make tallow. Most times I get up to a quart or more of tallow---------that I'll save.
I'm not saving a few tablespoons of turkey fat and I'm definitely not putting it in my jars of tallow.
