Needed something acidic to cut the heavy cheese grits and buttery shrimp.
I saw this pickled watermelon on Triple-D today, so I gave it a shot. Very simple, red wine vinegar, sugar, salt, pepper, and cubed watermelon.

It looks tasty, but I would be upset if I had to dig shrimp out of grits and peel them.

Yes, I peeled the tails and deveined before cooking. I left the heads on for flavor.
