broth simmering question(Ramen Noodles)

Recipe says to simmer the pot for 12 hours. Let's say i have to leave the house after 8 hours. Can I turn the stove off and simmer the remaining 4 hours when I get back?

How long will you be gone? That pot isn't gonna boil dry in 1/2 an hour. I'd have no problem leaving it unattended for a short while it still cooks. But don't turn it off and leave it sitting on the stove for three hours....that's a bacteria festival.

You will 100% no questions asked be ok to stop the simmer for up to about 4 hours if it is a medium sized pot. The food safety rule is that it not be in the food danger zone for temp for more than two hours. I can tell you though that that number is VERY conservative.

Eta: also, the moment you stop the simmer, the pot will still be out of the danger zone (41-145F) for at least another hour or so until it cools off a little.
