Brisket on the Boss

9:30 PM Cenla time.

Just put the brisket on the Pit Boss, temp set at 225F and alarm clock is set for 5:30AM. I will get up, check the internal temp and hopefully brisket will be in the 165 - 170 range and I'll do a butcher paper wrap and kick the temp up to 250F and in about 2 hours brisket should hit the 200F - 205F internal temp.

You need to wait to put it on the pit until midnight.

Yep, midnight would have been my put on the pit time but I had to get going early this morning and needed the brisket ready to travel by 7:30.
Actually woke up around 3:30 and checked the brisket and it was at ~170 - 175 internal so I wrapped it and put it back on until 6:30. Temps were 200 - 205 so off it came and away we went. Hope they enjoy it.

Try this next time you do a brisket on a pellet smoker. I have used this one and had some of the best briskets with a pellet smoker. Best of luck.

I like the logic behind that method and bookmarked the video and will try this on the next one.
