i agree with you. This was how i understood it, although im def not a casing expert.

Well, boudin link describes boudin king as having a good casing... If you follow their reviews you know they judge a casing by it being easy to bite into.... I haven't had their boudin in years... To much rice for my preference.

I have eaten at Boudin King probably 1000x more than the dude from that site. It is literally 2-3 blocks from where my parents live. (I agree about the rice ratio there being bad) They may have just gotten them at a time where the casing was breaking too which is rare.

Sat under the pecan tree and ate my boudin casing and all with my saltines, my cracklin and my community coffee. Picked a bushel of silver queen corn, made a lap, got my georgia boots dirty, finished the sleeve of saltines at lunch with a can of potted meat and now I'm on the back porch shucking corn and slicing tomatos and just about to cut this strong glass of ice with some good bourbon.

All in all, a nice, wet summer day.
