I've cooked them in a crock pot. As with pretty much everything, it's trial and error, but I've become pretty good at it. The cup of salt per lb works pretty well. Also, if you're cooking in a crockpot, place something heavy on top like a saucer, to keep them submerged. Good luck.

Hell yeah you can. Some people freeze them after boiling, some freeze them green. I prefer to freeze them green.
Just be sure and used freezer bags and not just regular ziploc or they will freezer burn.

I had my first "fresh" ones of the year last weekend. Picked some small ones up from Southside Produce in Denham Springs.
