I would be willing to bet eggs in red gravy and gumbo originated during lent.

I know my family had eggs in red gravy for St. Josephs alters. No meat allowed.

I've only recently started hearing about boiled eggs in gumbo...shelled or not. When did this start?

If this was directed at me....

Catholics did not eat meat on Fridays util about the 60s.
Don't remember the exact reason but i would think that is why eggs appeared in dishes.

You could eat fish but i guess eggs were cheaper for some families that did not have access to fish.

Yep. In 66 the doctrine was changed to allow meat eating on Fridays except for during Lent or other Holy Days of Obligation that fell on Fridays.

Meat had become such a big part of the American diet that the U.S Conference of Catholic Bishops decided to rescind that rule.


When I was a kid, every Friday was some form of seafood for our meals. I was born in 52 so that's a lot of Friday meals of fish, shrimp, crabs, oysters over the years.
