I cooked 95 gallon pot a few months ago.
Big cast iron pot, get your oil hot, add your flour slowly and stir with the paddle constantly.
Once roux is dark enough, add roasted garlic, celery, onions, and okra. This will slow down the roux from burning.
I always grill my sausage and chicken, bc I dont like my chicken shredded, I like chunks.
Add the browned meat, along with your hot sauce and spices, and chicken stock / water.
Skim the oil, there's going to be a good bit
Finish with green onions.
