Has anyone ever made this? Christmas time or the Holidays? I know it isn't the season, but I'm thinking of taking a crack at it this weekend. I've got the recipe from Gordon Ramsay. Any tips?

I would love to try to make it but I feel like it is a level 9000 dish and I'm at level 6

I've made it twice for Christmas. It was delicious but I wasn't happy with the finish of the pastry (soggy at the beef side).

I'm a more accomplished cook now so I may need to tackle it again to see if I can perfect that aspect of the dish.

It is a long process but not something that is particularly technically challenging. My brother used to frequently do individual beef wellingtons using cut steaks instead of the whole loin and those came out great too.

You probably didn't cook off enough of the moisture from the mushroom mixture.
