I made something like this..I find it interesting that you say the Sesame Oil can be over powering..What I found out is that the Soy Sauce is over powering..I might try the less sodium and use less of it.

It's probably a matter of taste. I expect many Asian dishes to have an underlying soy sauce flavor. Whether it is Korean BBQ beef short ribs, Chinese BBQ pork (char siu), or Japanese tempura dipping sauce.

It could also be that the dark toasted sesame oil I have is very strong. 1 tablespoon was enough to make it the dominant flavor of the ribs / marinade. Just the other day I made a recipe that called for something like 1/2 teaspoon of that oil - and after mixing the marinade I could still smell it in several rooms of the house. Thankfully, the results were not overpowering. But I recommend using it judiciously.
