This. I made this mistake a few years ago and marinated the skirt steak in fresh squeezed lime juice for 7 or 8 hours. Almost inedible due to how tart they were. My wife playfully jokes about these as my "Atomic Warhead" fajitas.

My favorite restaurant in Monterey, CA served a hanger steak sandwich on a potato roll with romesco, aioli, and watercress. It was simply heavenly
