Understood but some day find an opportunity to eat it traditionally and let me know what you think.
By the way if you get HBO Max there is a show called Ranch to Table and she does a Santa Maria Style traditional cook on the first episode. Has recipes and stuff. Take a look if you get that.
Although she talks about a medium rare finish it looks more like medium well to well. No bueno but I think she does it for the kids. Yuck
