Saw it at Rouses yesterday for $9.99/lb.
Never heard of it before so i asked what it was. Guy tells me it's similar to Sea Bass. I chuckled and said "yeah ok bud, so this $10/lb fish taste similar to the $30/lb fish"
He corrected me and said it's similar in that it's white and flaky, and has a sweet taste, but needs more seasoning than you would on a Sea Bass. And said everyoen that has tried it came back and said they loved it.
Looked it up and it's an inland fish from central america, related to Drum and Croaker.
So i got some, baked it last night. two fillets that were each a little over a pound. rubbed some melted butter on it and put some sea salt, cracked pepper, smoked paprika and a little bit of Old Bay on it, and let that marinate for about an hour before baking for about 15 minutes at 400F.
Wife loved it, even though she was skeptical about it, and my two youngins ate at least half a pound each of it, most i've ever seen them eat fish that wasn't salmon. The fat parts that had nice big flakes were really really good.
Highly recommend it if you can find it. What i really liked about the fillets was that they were very uniform in their thickness for the most part. They were about 1.5" to 2" thick and it only slightly tapered down at the end
