Anyone else hate super greasy fried chicken?

My chronic pancreatitis won't allow me to eat greasy chicken of any type, but super greasy fried will put me in an amberlamps underway to the ER before the last biscuit can be buttered.
I'm still trying to find a place in Monroe/West Monroe area that fries a yardbird I can tolerate better so I can eat more of it and sides.

A lot of my family loves the fried chicken at highway fried chicken on Jefferson hwy between clearview and causeway in Jefferson. I’ve always found it too greasy. It’s good but not great in my mind.
