Gf is half Yup'ik Native and got her Mom to give me some yugtaq food when I went out to their village a week or so ago.
Got moose,salmon filets,halibut, seal meat, crowberries, salmon berries, dried salmon, smoked salmon,salmon strips.
Felt like I hit the jackpot.
Make moose stew right now actually

Everything I'm reading says due to the volatility, it's best to serve the meat fresh. It's super fatty and has a high oil content. The loin can be served roasted or sauteed to medium rare. The flippers can be treated like pork shoulder.
