Any good " Liver n onions " recipe out there

Never cooked but always liked it. Would like to do so. Doubt it is too difficult.
Calf or beef liver? Which do you prefer?

Calf liver..... Main thing is to.not over cook it.

Calf liver, sliced 1/8 - 1/4 inch thin. Soak in milk 1/2 hour, remove and add salt and pepper, dredge in flour seasoned with pepper and garlic powder.

Fry gently (over medium to medium low heat) in 12 butter and 12 oil. When browned, remove and sauté (lots of) onions, remove onions when browned and make a medium dark roux, then deglaze with red wine and water to make a brown gravy. Add a touch of milk if you like. Return liver and onion and lower heat. Put on a lid and continue cooking slowly with a lid for thirty minutes as you make real mashed potatoes. Cook green peas and skillet fried cornbread.
