Darker roux will have less thickening power too. The darker the roux, the less thickening power it will have.

Glad to see you posting again. That looks great. I'm not a fan of seafood gumbo but I love Chicken and Sausage.

2 mistakes. You don't have your standard fork / spoon view pic and you are missing the well toasted and buttered bread to go along with the gumbo. lol.
