Plot holes/pointless characters in Uncut Gems (spoilers)

I know nothing of the directors, but I did enjoy some aspects of the movie, but not all, and thought some of it was just kind of pointless.
Like why the film was seemingly filled with arcless or unmeanigful situations introduced by minor minor characters and small side stories like the bald guy who was looking for the Weeknd's Michael Jackson crucifix necklace and the stringy haired guy who Sandler gave the fake Rolex to.
Both of them appear multiple times throughout the film, often showing up in a matter of crisis for Sandler, but nothing really ever came of them.
Were they just there to show that Sandler's character is a shithead or that he's strung out too much, or were they just oversights by the writing?

“Is this your heavy?” Those two nerds bothering him outside car was hilarious. They seemed like two characters from one of his comedies.

The point was to show that his life was chaos and he was spread thin from poor decision everywhere he went.
