When do you pick jalapeño's?
When it's green or red?
Wife bought a jalapeño plant this year for the garden for the first time and they are getting ripe but I have no idea when to pull them.

obviously most picked for market are picked green

red usually sweeter
green more acidic and hotter IMO
the key is before they get soft or get little yellow lines indicating they are drying out some and getting tough.
Epsom salt makes them produce more and bigger fruit btw
