If it doesn't have a whole lot of flavor, then add seasoning to get it to the flavor you want. The gumbo as a whole is not going to magically season itself overnight if the broth itself doesn't have much flavor. What gets better overnight is the flavor of your meats because they are sitting in seasoned water for a long time.
