I plan on making a double batch this weekend. My plans are some for turkey day, some for Christmas and the rest for next year. Do y'all find any kind of change in texture or taste whether its refrigerated or not? I've got room to store it both ways.

I'm not sure anyone has had the balls to store it at room temp yet
Has anyone tried subbing the sugar for honey? I was out checking my hive the other day and it dawned on me that I may try to sub the 2 cups sugar for 1 1/2 cups honey. I kind of want to make a mini batch just to test it out and see how the flavor changes.
