Tenderize them, then but them in a saltwater brine for 1 day. Fry them up and toss them in franks red hot buffalo sauce. Boom, you have buffalo duck wings. Dip in ranch or blue cheese

I use ice water, a bit of vinegar, and salt. Works well for me.
