So let's say they ask, I say yes I'm vaccinated. That's the end right?

If your employer says that’s the end, then sure. He can and likely would request proof of vaccination I’m guessing.

You refuse to show that on request, you’re likely getting let go if your employer has made the vaccinations mandatory and sticks to it. In which case you have zero recourse.

End of your employment; yes. They can require proof. It's up to you to provide the proof.
