The first place you screwed up is even answering the question.
It's not anybody else's business whether you've been vaccinated or not.
Unless they have a written policy saying it is a requirement of employment I would decline to comment. It's certainly legal for them to do that (unfortunately) but make them do that and then make your choice.
IMHO I don't believe many companies will be taking the risk to make written policy requiring it as then they have some liability if you have an adverse reaction and then it would even become an OSHA recordable.
Even many healthcare settings do not require it as they know it is a huge can of worms.

Add to the employment app "have you ever been vaccinated for Covid-19
If they answer "no", then I wouldn't hire them, and if they leave it blank, then I wouldn't hire them...problem solved.
