Find a Low mileage Isuzu trooper with manual shift and V6. The earlier models with the Chevy 60 degree V-6 are incredible and inexpensive to buy and maintain.
I know a guy that does 100% restorations on them, he usually has 1 or 2 for sale.

If a Honda Pilot made it through just get whatever 4wd vehicle you want with good tires and you will be fine. Tires are 90% of the battle. You don't need full on mud tires, a good all terrain tire will work like the Toyo open country or similar.
