Last year was the first time I had gone to the beach for a week with the family. We usually do a long weekend with just my wife and kids, or go for 4-5 days during a week. It was my mom and her husband, both my sisters and all their kids, and us. We decided each family would take turns making dinner. We cooked a few different casseroles and froze them a couple days before we left, and put them at the top of my cooler for the ride down. We also bought groceries and cooked one night, but it was an easy quick meal that everyone would like and all we had to do was sit it in the fridge when we got there and toss it in the oven one night. I think most of what we did was chicken. My wife made a big batch of chicken salad for sandwiches, and a huge poppyseed casserole. Just made a big pot of rice to go with it, some rolls, and green beans.
