If y'all are fairly active and think you might want to stray off the resort to do a little bit of hiking and sightseeing, check out Kauai.
From what I read though, the issue with that island is it's absurdly strict right now even vs the other islands, although that is expected to be reduced over the next couple of months (presumably vaccine situation will help a lot as well). I emailed a boat tour company there the other day as I'm also planning a trip, and he did expect to be back up and running this summer, albeit with no guarantees.
