As others have said channel mullet or whiting is very good and one of my top five fish to eat. If you caught them in a cast net then you prolly have “Popeye” mullet. I grew up gillnetting mullet gasp I know I should go to hell for killing all the speckle trout!! All of the Florida Gill netters who fished ate mullet from only Breton sound or deep water mullet from clean water an they grew up eating them. They claimed that the mullet in the bays and marsh tasted like mud.
Where did you catch them? could you see 5ft down? If not I would bet they are no good.

I'm in MS. Water is not too muddy right now but definitely not 5 ft viz. I think I'm going to have to try at least once. None of my LA cook books have mullet recipes, which should steer me away. Will probably try smoking it
