I have the 3 burner nat gas grill. Has two grill grates. Would like to get one of the griddles below to put in place of one of the grill grates. Sometimes I want to sear meats via flat griddle or cook other stuff while grilling meat on the regular grates.
Anyways, the one on the left is a custom made on Etsy “made from a high conductive steel 3/16 or 3/8 thick

The one on right from Weber is cast iron with porcelain enamel coating.
Which would be better as far as getting a good sear on steaks, fish, etc?
Steel vs cast iron

I have a spirit too but the two burner. a while ago I bought a set of GrillGrates after the cast iron was looking raggedy (6 yrs of 3x/week use). You can flip the GrillGrate sections over and it's just flat metal which gives a phenomenal even sear. I would also be happy with the dedicated griddle in you OP but if you're concerned about space then the GrillGrates can do double duty.

Which of the two would you prefer?
I’m familiar with cast iron as I sear in a skillet inside with cast iron often. Not familiar with steel vs iron

Edut I do have a grill grates grate for my pellet grill.

Looking for a flat surface here

flip them over so the flat side faces up and ridges face downward. Try searing on the flat side. If you are looking at the griddle for breakfast items then go with the dedicated griddle insert

The Weber porcelain coated one is a mixed bag. It's heavy and maintains heat well, but it's difficult to clean. I have one for my Weber Spirit.

I have Grill Grates for my kettle. As someone said, you can flip it upside down and it has a flat side. Works great.
