That salmon roll up looks good! What temp was the grill?
I’m of the mindset for this that the winner can pick what ever. A ingredient, a specific protein, style of cooking. As we go we will run out of the major categories like fish, shrimp, and so on so it will keep it interesting.

I did it on the smoker at 225 about 45 minutes. Glazed with a melted maple syrup/butter while on the smoker
