Are there upscale "resorts" that aren't mostly all-inclusive? I assumed once you went above a certain price at the resorts most of them are all-inclusive for the most part?

Maybe not for booze though? If you are paying $2500/ night for a hotel I'm assuming you may be drinking some nice wine or sparkly and its likely not included.

I've never personally been one that enjoys the "all-inclusive" aspect of it but I understand some people don't like to look at bills while on vacation. If the room is $1000+ a night I'm assuming the dinner bill is going to be up there also for something complementary to that?

Yes, most of them are not all-inclusive.

We seek out destinations and resorts. If the resort/hotel at said destination happens to be all-inclusive, so be it. However, those are few and far between.
