Brown gravy.

Season the squirrel and marinate in the fridge preferably over night but you don't have to.

Brown them awhile until they're dark

Add chopped onions and bell pepper and garlic. Sweat those down and brown them.

Add water, you should have a dark brown gravy. Add a can of golden mushroom and stir it good until it's blended.

Cover and simmer until the squirrel is tender

Serve over rice. Enjoy.

It's some of the best wild game in a gravy.
