Last night I took it and formed it into a patty and grilled it on my stove top with a pan. I put cheese on top and used a bun. It was actually pretty damn good.

Salmon fritters bind with egg, breadcrumbs and maybe add some green onion for flavor. Been a while, but used to love 'em!

I highly suggest you try this out. All I did was to put it in the pan and shape it while it's in there. Soooooooooooooo good and healthy too.

What holds the tuna together. I would think that when you flipped it the whole thing would fall apart. I can see if you used an egg wash and rolled in breadcrumbs and then fried in a little olive oil.

Did you drain the liquid first? If not, you should have gotten tuna mush.

Yes, I drain the water out. Naturally the tuna will hold itself together similar to a patty because it's thick enough. Once one side gets cooked enough, flipping it is easy. I don't cook it all teh way through, just the outsides so it forms into a patty shape. All in all it takes about 7 minutes. But, I've only done it twice and it's kind of trial and error.

Maybe try mixing in a little Mayo as a binder to help hold them together and keep them moist.

Sorry if I can't but laugh at you a little as I just took a break from trimming up a pile of fresh caught yellowfin tuna and slicing me a few 2" thick tuna steaks that I am about to throw on the grill, all while enjoying some fresh sushi.

Now anyone have some good tuna steak recipes ?

Oh and enjoy your can Tuna.

Life is good
