I guess you're actually producing TWO gasses (carbon dioxide and water vapor).
I think carbon dioxide is what is causing the popping because it is the result of the actual oxidation of cellulose in the wood itself.
The water vapor is the result of the reduction of the molecular oxygen surrounding the wood.
